I stayed home from work on Friday to recharge my batteries after a rough week with Natalie. Bedtime last week was sheer torture thanks to the no paci transition. However, Thursday night we had a breakthrough which made for a really great day with my girl on Friday.
We had some bananas sitting on the counter that were into their prime and there was no way Natalie was going to eat five bananas in a day so I opted to make some homemade banana muffins. I have to say, I was super pleased with how they turned out so I wanted to share the recipe here!
3/4 cup white sugar
1 4oz applesauce
3 ripe bananas
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
2 teaspoons ground cinnamon
1 teaspoon all spice
Preheat the oven to 350 degrees. Grease muffin tin with a little butter or, in our case, use leftover Minnie Mouse cupcake wrappers from someone's 2nd birthday :)
Mix sugar, apple sauce and egg until creamy in a bowl. Add in bananas. Add in flour, baking soda and salt. Stir until well combined and smooth.
If desired, add in chocolate chips or walnuts before spooning into the muffin tins. We did half plain and half with mini chocolate chips :)
Spoon batter into muffin tin and bake for 20-25 minutes, until toothpick poked in the center comes out clean.
Next time I make them, I think I will use cinnamon applesauce to add a little more cinnamon flavor, but I am also a huge cinnamon fan! The muffins were a big hit with Natalie and with B's co-workers who got to sample them on Friday afternoon!
